Creamy Carrot and Ginger Soup
Ingredients
4 large carrots, peeled and chopped
1 tablespoon fresh ginger, minced
4 cups vegetable broth
1/2 cup heavy cream
Salt and pepper to taste

Directions
In a large pot, add the carrots, ginger, and vegetable broth.
Bring to a boil, then reduce to a simmer. Cook until the carrots are tender, about 20 minutes.
Use an immersion blender to puree the soup until smooth.
Stir in the heavy cream and season with salt and pepper to taste.
Serve warm.
