Butternut Squash Soup
Ingredients
1 medium butternut squash, peeled, seeded, and cubed
4 cups vegetable broth
1 cup coconut milk
1/2 teaspoon ground nutmeg
Salt and pepper to taste

Directions
In a large pot, combine the butternut squash and vegetable broth.
Bring to a boil, then reduce to a simmer. Cook until the squash is tender, about 25 minutes.
Puree the soup using an immersion blender until smooth.
Stir in the coconut milk, nutmeg, salt, and pepper.
Serve warm.
